Laurent, seguendo le orme del padre Ren\u00e9, accompagna l\u2019approccio biologico con una vinificazione tradizionale in cui fermentazione e affinamento avvengono in legno e, soprattutto, la malolattica \u00e8 assente lasciando cos\u00ec intatta l\u2019acidit\u00e0 naturale delle uve.
