In cantina tutto viene eseguito nel modo pi\u00f9 tradizionale, dalla vinificazione in tini di legno alle fermentazioni spontanee e alle macerazioni molto prolungate. L\u2019affinamento avviene in botti di rovere da 30 hl per 48 mesi e in bottiglia per 8 mesi. Il Brunello di Montalcino DOCG di Poggio di Sotto non viene filtrato prima dell\u2019imbottigliamento"}
